Flaky Pie Crust

Tiny Bakery » Flaky Pie Crust

Ingredients for a Double Crust Pie Dough

2 1/2 cups all purpose flour
1 1/2 sticks unsalted butter
1/4 cup vegetable shortening
1/2 tsp salt
1 cup ice water

(you can halve this recipe for a single crust pie)

Directions

1. Cut butter into 1-Tbsp size pieces. Put butter and shortening in freezer for 20 minutes.
2. Mix together flour and salt. Add cold butter and shortening. Using a pastry blender, mix ingredients until the butter/shortening chunks are about the size of a pea.
3. Add ice water 1 or 2 Tbsp at a time (mixing with a fork) until dough holds together. Divide dough into 8 pieces and use heel of palm to smear it on the counter to distribute fats.
4. Combine smeared pieces and divide into 2 cylinders. Wrap in plastic wrap and refrigerate 1 to 24 hours.
