Veggie Burger

INGREDIENTS
* 1 cup dry TVP (textured vegetable protein)
* 3/4 cup hot water
* 1 cup grated zucchini (from about 1 medium zucchini)
* 1 teaspoon kosher salt
* 4 tablespoons olive oil
* 1/2 cup minced yellow onion (from about 1/2 medium onion)
* 1 medium garlic clove, minced
* 3/4 cup grated carrot (from about 1 carrot)
* 1/3 cup peeled, shredded red beet (from about 1/2 large beet)
* 1/4 cup plus 2 tablespoons sunflower seeds
* 2 teaspoons tomato paste
* 2 teaspoons ground mustard, such as Colman’s
* 1 1/2 cups cooked short-grain brown rice (about 3/4 cup dry)
* 2/3 cup cooked brown lentils (about 1/4 cup dry)
* 2 tablespoons minced Italian parsley leaves
* 1 tablespoon dried thyme
* 1 cup coarse whole-wheat panko, such as Ian’s
* 3/4 cup sliced cremini mushrooms
* 1 large egg
* 1 large egg white
* 3 tablespoons tamari or soy sauce
* 1/4 teaspoon freshly ground black pepper
* 7 whole-wheat buns or kaiser rolls, for serving
INSTRUCTIONS
1. In a medium bowl, combine the TVP and water. Stir and set aside until ready to use.
2. Toss the zucchini with 1/2 teaspoon of the salt and place in a colander or strainer set over a bowl to drain, at least 10 minutes. Squeeze the zucchini to release any excess water, then set aside, discarding the liquid.
3. Heat 1 tablespoon of the olive oil in a small frying pan over medium heat. When it shimmers, add the onion and garlic and cook until the vegetables are soft and translucent, about 5 to 6 minutes.
4. In a large mixing bowl, combine 1 cup of the soaked TVP mixture, the zucchini, carrot, beet, 1/4 cup of the sunflower seeds, the tomato paste, ground mustard, 3/4 cup of the brown rice, 1/4 cup of the lentils, the parsley, thyme, and 1/2 cup of the panko. Add the sautéed onion and garlic and mix well; set aside.
5. Heat 1 tablespoon of the olive oil in the same frying pan over medium-high heat. Add the mushrooms and cook, stirring occasionally, until tender and nicely browned, about 5 minutes. Remove from heat.
6. Transfer the mushrooms to the bowl of a food processor; add the egg, egg white, tamari, pepper, and remaining salt, TVP, sunflower seeds, brown rice, lentils, and panko. Process until the mixture is well combined and uniform, about 30 to 45 seconds. (The mixture will not be smooth.)
7. Add the puréed mushroom mixture to the reserved TVP mixture and combine well (using your hands works best). Form into 7 patties (about 3/4 cup each) and place on a baking sheet. Heat the remaining 2 tablespoons olive oil in a large nonstick frying pan over medium-high heat. Add 3 patties to the pan and brown on one side, about 6 to 7 minutes; flip and continue cooking until the burgers are crispy and heated through, about 5 to 6 minutes more. Repeat with the remaining patties and serve on whole-wheat buns or kaiser rolls with your favorite toppings.

Daddy, Can i have $ 10 ?
A man came home from work late, tired and irritated, to find his 5 year old son waiting for him at the door.
“Daddy, may I ask you a question?”
“Yeah, sure, what is it?” replied the man.
“Daddy, how much money do you make an hour?”
“That’s none of your business! What makes you ask such a thing?” the man said angrily.
“I just want to know. Please tell me, how much do you make an hour?” pleaded the little boy.
“If you must know, I make $20.00 an hour.”
“Oh, ” the little boy replied, head bowed. Looking up, he said, “Daddy, may I borrow $10.00 please?”
The father was furious. “If the only reason you want to know how much money I make is just so you can borrow some to buy a silly toy or some other nonsense, then you march yourself straight to your room and go to bed. Think about why you’re being so selfish. I work long, hard hours everyday and don’t have time for such childish games.”
The little boy quietly went to his room and shut the door. The man sat down and started to get even madder about the little boy’s questioning. How dare he ask such questions only to get some money. After an hour or so , the man had calmed down, and started to think he may have been a little hard on his son. May be there was something he really needed to buy with that $10.00 and he really didn’t ask for money very often. The man went to the door of the little boy’s room and opened the door. “Are you asleep son?” he asked.
“No daddy, I’m awake,” replied the boy.
“I’ve been thinking, maybe I was too hard on you earlier,” said the man. “It’s been a long day and I took my aggravation out on you. Here’s that $10.00 you asked for.”
The little boy sat straight up, beaming. “Oh, thank you daddy!” he yelled. Then, reaching under his pillow, he pulled out some more crumpled up bills. The man, seeing that the boy already had money, started to get angry again. The little boy slowly counted out his money, then looked up at the man.
“Why did you want more money if you already had some?” the father grumbled.
“Because I didn’t have enough, but now I do,” the little boy replied.
“Daddy, I have $20.00 now… Can I buy an hour of your time?”
Give time to your children, because its easy to get carried away with life.

Truffle Cake Recipe

Ingredients
- 3 Cups (18 0z) semisweet chocolate chips shopping list
- 2 sticks (1 cup) unsalted butter
- 6 large eggs, at ROOM TEMPERATURE
How to make it
- Heat oven to 425 F.
- Coat an 8x3-in. cake pan (I like using an oval pan) with nonstick spray. Line bottom with wax paper; spray paper. Have a large roasting pan ready.
- Melt chips and butter together;stir until well blended.
- Beat eggs in a large bowl with mixer on high 7 minutes, or until tripled and soft peaks form. Fold in chocolate mixture until blended. Pour into cake pan.
- Place large pan in oven; place cake pan inside. Pour boiling water into roasting pan to come halfway up sides of cake pan. Cover cake pan loosely with foil; bake 40 mintues. (Cake looks soft but sets when cold.)
- Cool cake in pan on a wire rack. Cover and refrigerate 3 hours, or until firm. Invert on serving platter; shake down sharply to release cake. Peel off paper.
- If desired, lay five 3/4-in.-wide strips of paper 3/4 in. apart on cake. Sift cocoa between strips; carefully lift paper. Repeat in opposite direction, this time sifting on confectioners' sugar.
Cake Truffles Recipe

Ingredients
- 2 cups crumbled cake scraps
- 2 Tbsp. confectioner's sugar
- 2 Tbsp. cocoa powder ( if cake scraps are not chocolate based)
- 1/4 cup chopped almonds, or any other nut you like, OR mini chocolate chips, M&M's)
- 2 shots of Amaretto ( or any other liquer you may like) OR a good non-alcohol subsitution is any flavored coffee creamer)
How to make it
- Put all ingredients in a mixer and mix on medium speed until the ingredients form a ball. If the mixture seems too dry, add a bit more of the liquid used to make it moist enough to form into balls.
- Use a tablespoon sized cookie scoop to make balls uniform in size. Roll te scooped dough in your hands to form a nice smooth ball. Allow cake balls to set on a parchment lined cookie sheet for a couple of hours, then dip in chocolate or roll in confectioner's sugar or cocoa.

Strawberries Romanoff

Strawberry Romanoff
Servings: 4
Ingredients:
1 pound Fresh Strawberries
1/4 cup Cointreau
3 tbls. Sugar
1/2 cup chilled heavy cream
Instructions:
As served at the San Francisco Palace
Hotel...
Quarter 1(one) pound strawberries and gently toss with 1/4 cup Cointreau and 2 tablespoons sugar, then marinate
(or the word used when fruits are soaked is: macerate) strawberries and cointreau mix at room temperature for 20 minutes, stirring while strawberry mixture is marinating*.
Whip 1/2 cup chilled heavy cream with 1 tablespoon sugar until it holds stiff peaks.
Serve berries with their juices and whipped cream.
The Strawberries Romanoff look pretty served in glass goblets.

*Note: Marinating the strawberry and cointreau mixture should only be done in a glass, ceramic, or stainless steel bowl or container, never aluminum, because most marinades contain acid ingredients.

Crispy and Light Waffles

Ingredients:
3.75 oz all purpose flour (about 3/4 cup)
1.25 oz corn starch (about 1/4 cup)
1/4 tsp sea salt
1/2 tsp baking powder
1/4 tsp baking soda
1 cup milk
1 tbsp white vinegar
5 tbsp melted butter
1 extra large egg, separated
1 tbsp amaretto liqueur (optional, but gives it a lovely nutty aroma)
1 tbsp vanilla sugar (or do regular sugar with 1/4 tsp vanilla extract)
Directions:
Place the milk and vinegar in a medium bowl and set it aside so it can curdle a bit. Preheat your waffle iron.
In another bowl, whisk to combine the flour, cornstarch, salt, baking powder, and baking soda.
Add the melted butter, amaretto, and egg yolk to your curdled milk, and whisk until well combined.
Place the egg white in a very clean glass or metal mixing bowl (no plastic or the whites won’t whip up), and use a mixer to beat the egg white until foamy:
Once foamy, add the vanilla sugar and beat until you get stiff peaks. You check for stiff peaks by putting the beater heads directly into the bottom of the bowl, lifting straight up out of the bowl, and inverting the beaters, like this:Whisk the curdled milk into the dry ingredients, and make sure to leave some lumps. Next, add the stiff egg whites in plops, and gently fold them into the batter to lighten it. It’s fine to leave a few egg white clumps in there, because you don’t want to deflate them too much.
Time to cook them waffles! Pour the batter into your waffle iron, and note that you will have to play around with your settings. For my particular waffle iron, cooking them on high burned them, and medium was about right for mine. I served my waffles with blueberry sauce, fresh berries, and a dusting of powdered sugar. Perfect for summer berry season. Enjoy!
Makes 6-8 waffles, so probably about good for 2 people.

Ingredients:
For cake
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 tsp salt
1/4 tsp baking soda
1/2 cup sugar
1/2 cup butter
1 egg
1/2 cup sour cream
2 cups fresh blueberries
For topping
1/2 cup all-purpose flour
1/2 cup sugar
1 tsp cinnamon
1/4 cup butter
Method:
Grease a 9 x 13 pan and set aside. Preheat oven to 350. Set butter for topping on counter to soften. Mix flour, baking powder, baking soda and salt for cake in bowl. In the bowl of a stand mixer, cream butter for about 30 seconds. Add sugar and beat until fluffy. Add egg and mix to incorporate. Alternate adding dry mixture and sour cream until incorporated. Spoon batter into pan, remember it will be sticky. Spread blueberries evenly over the top. In a separate bowl, mix together ingredients for topping using a fork or your fingers to cut in the butter. When it resembles coarse crumbs, sprinkle over the top. Bake for 50 to 60 minutes, until golden. Serve warm with or without ice cream.

S'mores Cupcake Ice Cream Sandwiches

S’mores Cupcake Ice Cream Sandwiches
Makes around 1 dozen cupcakes
Marshmallow Ice Cream
2 C half and half
1 10-oz. bag of large marshmallows
2 C heavy cream
2 T vanilla extract
In a large pot, combine half and half with marshmallows. Cook over medium heat, stirring frequently until marshmallows have completely melted. Remove from heat and let cool briefly. Then place in fridge to cool for 20-30 more minutes, until chilled and slightly thickened.
In the meantime, whip heavy cream until you have soft peaks. Fold into cooled marshmallow mixture and add vanilla extract. Stir until everything is combined. Place in ice cream maker and follow manufacturer’s directions for making ice cream.
Graham Cracker Crust
2 C graham cracker crumbs
1/4 C sugar
8 T unsalted butter, melted
Pinch of salt
Line 2 cupcake pans with paper liners (you’ll need around 24 crusts total if you want to make a bottom and top for each cupcake). Preheat oven to 350° F.
In a small bowl, mix together graham cracker crumbs, sugar, melted butter and salt with a fork. Drop around 1 1/2 tablespoons of the mixture into each cupcake liner and press down firmly. Bake for about 5-10 minutes (until edges of crust are golden). Remove from oven and set half aside. Leave oven set at 350° F and prepare cupcake batter.
Chocolate Cupcakes
1 C + 1 T sugar
14 T unbleached all-purpose flour*
7 T unsweetened cocoa powder*
3/4 t baking powder
3/4 t baking soda
1/2 t salt
1 large egg
1/2 C milk
1/4 C vegetable oil
1 t vanilla extract
1/2 C boiling water
Sift together sugar, flour, cocoa powder, baking powder, baking soda and salt. Stir lightly with a fork to combine. In a mixing bowl, combine egg, milk, vegetable oil and vanilla extract. Combine dry and wet ingredients and mix on low speed for a minute, then medium speed for 1-2 more minutes, scraping the sides of the bowl in between if needed. Add boiling water and mix just until combined. (Note: The batter will be very thin at this point.)
Pour 1/4 cup of batter on top of half of the crusts (mine were a little over 3/4 full). Bake for 15-18 minutes, or until tops are firm and toothpick inserted in the centers comes out clean. Let cool completely.
To assemble:
Slice the rounded top off of the cupcakes to level them. Place a small scoop of ice cream on top and flatten with the back of a spoon. On top of the ice cream, place one of the baked graham cracker crusts. Enjoy quickly or place in the freezer until you do!
