Outrageous Brownies

Outrageous Brownies
[Adapted slightly from Ina Garten]

Ingredients:

1 lb. unsalted butter
1 lb. plus 12 oz. semisweet chocolate chips
6 oz. bitter chocolate (100% cocoa)
6 extra-large eggs (at room temperature)
1 ½ Tbsp. instant espresso grounds
2 Tbsp. pure vanilla extract
2 ¼ C. granulated sugar
1 ¼ C. all-purpose flour
1 Tbsp. baking powder
1 tsp. kosher salt

Method:

Preheat the oven to 350 degrees F. Butter and flour a 12 x 18 x 1-inch baking sheet.

Melt together the butter, 1 pound of chocolate chips, and the bitter chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.

In a medium bowl, sift together 1 cup of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the remaining 12 ounces of chocolate chips in a medium bowl with the ¼ cup of flour, then add them to the chocolate batter. Pour into the baking sheet.

Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. Bake for about another 15 minutes, until a toothpick comes our clean. Do not overbake! Allow to cool thoroughly. Cut to desired size and enjoy!

Cheddar and Onion Smashed Burgers
[Adapted from Toronto Star who adapted it from June’s Food & Wine recipe from Umami Burger]

Ingredients:

1 1/4 lb. (575 g) ground beef (not too lean)
Kosher salt and freshly ground pepper
2 small yellow onions, sliced across the equator paper thin
4 oz (115 g) cheddar cheese, sliced
4 soft buns, split, warmed

Method:

Heat a large cast-iron skillet or cast-iron griddle over medium heat for 10 minutes.

Without overhandling meat, loosely form into four, 5-oz (140-g) balls.

Place in pan or on griddle. Cook, undisturbed for 30 seconds. Using large, unperforated, heavy spatula, flatten each ball into a 5-inch round patty. Season each with salt and pepper. Cook undisturbed for 2 minutes. Press one-quarter of the onions onto each patty (some will fall to side). Use a spatula to carefully flip the burgers so the onions are on bottom. Top each patty with a piece of cheddar cheese. Cook for 2 minutes. Cover and cook for 1 minute to melt cheese.

Transfer burgers with onions to buns.

Cook time: 5 min
Total time: 10 min
Yield: 4 servings

Betty's Blueberry Streusel Muffins

In this video, Betty demonstrates how to make Blueberry Streusel Muffins. These are Blueberry muffins with a gorgeous crunchy brown sugar topping. For plain blueberry muffins, please see my earlier version of blueberry muffins in bettyskitchen. Ingredients: 2 cups self-rising flour 1/3 cup sugar 1 egg, well beaten ¾ cup milk ¼ cup vegetable oil 1 cup fresh blueberries ¼ cup light brown sugar 2 tablespoons self-rising flour 1 tablespoon butter cooking oil spray In a large mixing bowl, combine 2 cups self-rising flour and 1/3 cup sugar. Measure out 2 tablespoons of this mixture, place it in a small bowl, and set it aside. Make a well in the center of the remaining flour-sugar mixture. In a medium mixing bowl, combine 1 well-beaten egg, ¾ cup milk, and ¼ cup vegetable oil. Add liquid mixture to the dry mixture. Stir just until dry ingredients are moistened. Do not over-stir. Combine 1 cup fresh blueberries with reserved 2 tablespoons of flour-sugar mixture. Toss to coat. Fold coated blueberries gently into muffin batter. Spray 12 muffin tins with cooking oil spray. Spoon batter into muffin tins, filling each ¾-full. In a small bowl, combine ¼ cup brown sugar and 2 tablespoons flour. Cut in 1 tablespoon butter, using a pastry blender or fork. Mixture should be crumbly. Spoon mixture evenly over the batter in the 12 muffin tins. Bake at 400 degrees for approximately 18 minutes, or until lightly browned. AWARENESS CAMPAIGN: UPUAN (Special Report on Educational System)

"Upuan" -the Filipino word for chair, a simple need in a classroom,yet each year we find many public schools in the Philippines, lacking this simple need. Students have to share chairs or even sit on floors in packed, overcrowded classrooms.... How could MOST of our children learn with this kind of situation?! Still, I admire the determination of students, many coming from the poorest families, to finish their education!
