Roasted Chicken for dinner plus....the Pinoy classic "Tinola"

The best way to cook chicken, use the simplest recipes and methods....
First, OVEN-ROASTED CHICKEN ( Simply season a good size fresh chicken with kosher salt and freshly ground pepper, thyme leaves but i used oregano leaves and dried rosemary, for the base just the buttered garlic, preheat oven at 450 F, roast the chicken for about an hour, turn to sides to make sure you get even crisps).


There you have the happy cook, all smiles, that seldom happens, and yes tired! but genuinely happy and satisfied.....Where's the rest of the chicken? Gone too soon. Masarap talaga to the bones!



And the Chicken soup....TINOLA (Simply saute garlic, add ginger, then add the chicken pieces, continue to saute, sprinkle with pepper and salt, add water, add the cut sayote, add some patis (fish sauce) according to taste, let boil until chicken is tender,  top with fresh Tagalog chili leaves. Simmer for few minutes. Ready to serve.) But only one piece left now.....;-)
