Banana Cream Pie with Caramel Fudge

Ingredients:
Pastry or Pie Crust:
1 pack MAYA Complete “Quick n’ Easy” Hotcake Mix 200g
1 tablespoon cocoa powder
4 tablespoons water
Filling:
1/4 cup sugar
3 tablespoons Cornstarch
1 1/2 cups evaporated milk
1 piece egg yolk, slightly beaten
1 tablespoon butter
1/2 teaspoon vanilla
3 pieces ripe banana (lacatan), sliced into rounds
Caramel Fudge:
1 cup whipping cream
2 tablespoons powdered sugar
3/4 cup sugar
1/2 cup softened butter
Procedure:
1. Preheat oven at 400°F/ 205°C.
2. Combine MAYA Complete Hotcake Mix with cocoa powder. Add water, one tablespoon at a time, enough to form a ball of dough. Roll out to 9-inch pie plate.
(Note: Making a pie crust for the first time can be a challenge. Woth practice, you should get the hang of it. I demonstrated the one pie crust in a past entry. Here is another guide Making the Perfect Pie Crust)
3. Bake until golden brown. Cool.
4. Prepare filling. Combine sugar and cornstarch. Gradually stir in evaporated milk. Cook over double broiler stirring constantly until mixture thickens. Remove from heat.
5. Gradually stir half of the mixture into the beaten egg yolk. Put back in saucepan and blend. Cook until mixture coats spoon. Blend in butter and vanilla. Cool.
6, In a bowl, whip half of the cream with powdered sugar until stiff. Chill.
7. In a saucepan, caramelize sugar in low heat then add butter and remaining all purpose cream.
To assemble:
1. Layer half of banana into pie plate – pour the filling.
2. Arrange remaining half of banana and cover and drizzle caramel fudge.
3. Decorate with whipped cream if desired.
Yield: 8-10 servings

Banana Crumb Muffins
Ingredients:
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon
3 bananas, mashed
1/2 cup white sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 egg, lightly beaten
1/3 cup canola oil
1/3 cup packed brown sugar
2 tablespoons all purpose flour
1 teaspoon ground cinnamon
1 tablespoon butter
Directions:
Preheat oven to 375°. Lightly grease 12 muffin cups or line with muffin papers
In a large bowl, mix together flour, baking soda, baking powder, salt, nutmeg, and cinnamon. In another bowl, beat together bananas, white sugar, brown sugar, vanilla, egg, and oil. Stir the banana mixture into the flour mixture until just moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, flour, and cinnamon. Cut in butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18-20 minutes or until a toothpick inserted into center of muffin comes out clean.

Bananas Foster Bread

Bananas Foster Bread
Ingredients:
1 1/2 cups mashed ripe banana
1 cup packed brown sugar, divided
6 tablespoons butter, melted and divided
1/4 cup dark rum, divided
1/3 cup plain fat-free yogurt
2 large eggs
1 1/2 cups all-purpose flour
1/4 cup ground flaxseed
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/3 cup powdered sugar
Directions:
Preheat the oven to 350 degrees F. Grease bottom and sides of one 9 x 5-inch loaf pan; dust with flour, tapping out excess.
In a nonstick skillet over medium heat, combine banana, 1/2 cup brown sugar, 5 tablespoons butter, and 3 tablespoons rum. Cook over medium heat until mixture begins to bubble. Remove from heat; cool. Place banana mixture in stand mixer fitted with the paddle attachment. Add yogurt, remaining 1/2 cup brown sugar, and eggs. Beat at medium speed until combined.
In a medium bowl, combine flour, flaxseed, baking soda, salt, cinnamon and allspice. With the mixer on low, add flour mixture to banana mixture and beat just until blended. ,Pour batter into the prepared pan. Bake at 350° for 1 hour or until a toothpick inserted in center comes out clean. Remove from oven; cool 10 minutes in pan on a wire rack. Remove bread from pan; place on wire rack.
While the bead is cooling, make the drizzle by combining remaining 1 tablespoon melted butter, remaining 1 tablespoon rum, and powdered sugar; stir until well blended. Drizzle over the warm bread.
Yields: 16 servings

Banana Chips

Dried Banana Chips
Slice bananas approximately 1/4″ thick
Preheat oven to 150°F
Lay banana pieces in a single layer on a rack placed on top of a cookie sheet.
Place sheet in oven and cook for 1 to 2 hours until bananas are dry.
When done the banana chips will be a bit pliable but hard on the outside, remove from oven and allow to cool fully before storage. Lift each banana slice up off the rack to prevent them from sticking while drying.
Once dry the chips will be crisp.
Tips:
For an extra treat, dip banana pieces in a honey/lemon mixture then dip in shredded coconut or chopped nuts (before placing in oven to dry).
Choose ripe bananas that have no bruises or soft spots for best results.
Store the banana chips in an airtight container.
To help prevent the banana chips from browning while they’re drying, first dip pieces in lemon or pineapple juice.

Banana Cake!
6 Miles Down and Banana Cake! « Baking with Buttermilk
Banana Cake with Cream Cheese Frosting and Honey-Toasted Almonds (makes 1 double layer cake, or 1 single layer cake and 6 large muffins)
For the cake: (adapted from Culinary Covers)
2 1/2 cups (350 g) all-purpose flour (I used white whole wheat)
1 1/2 tsp ground cinnamon
1 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 cup (8 ounces/230 g) unsalted butter, at room temperature
1 1/2 cups (300 g) sugar
1 tsp vanilla extract
1 Tbsp instant espresso or coffee powder (I omitted this)
2 large eggs, at room temperature
6 Tbsp (90 ml) buttermilk, yogurt or sour cream (regular or low-fat), at room temperature (I used Fage 0%)
2 cups (50 ml) banana purée (3 to 4 very ripe bananas) (I used 4)
1. Preheat oven to 350°F (175°C)
2. Spray with oil or butter 2 9-inch cake pans. Line the bottoms with parchment paper. (If making muffins, prepare one cake pan and 1 muffin tin)
3. In a medium bowl, combine flour, cinnamon, baking powder, soda and salt. Whisk to combine.
4. In a stand mixer bowl (or large mixing bowl if using a hand mixer or spoon) beat butter and sugar until light and fluffy. It should take about 3 to 5 minutes. Incorporate the vanilla and espresso powder. Beat in eggs one at a time until each is completely mixed in. Add half of the flour then the buttermilk and banana purée. Add the remaining flour and stir until combined, but don’t over mix.
5. Divide the batter between the two prepared pans (or pan and muffin tin) and bake until golden and toothpick comes out clean, about 40 minutes. (12-15 minutes for muffins, or until tops spring back to the touch) Cool in pans on wire racks.
For the frosting: (adapted from Cheeky Kitchen’s Come-to-Mama Cream Cheese Frosting)
1 stick butter
4 oz. cream cheese
1 1/2 cups powdered sugar
1 tsp vanilla extract
1-2 Tbsp. almond milk
In a large bowl, beat together butter and cream cheese until very light and fluffy. Slowly add powdered sugar until well mixed. Add vanilla extract. Tip in a Tablespoon or two of milk, if needed.
For the almonds:
1/3 cup sliced raw almonds
1 Tbsp honey
1 tsp ground cinnamon
1/8 tsp salt
Place almonds in a small pan over medium heat. Allow to begin toasting, 1-2 minutes. Add honey, cinnamon and salt, stir until golden. Add water 1 tsp at a time if clumping together. Toast until fragrant but not burnt, about 5 minutes. Pour onto lined baking sheet or Silpat when done until ready to use.

- 1 Tablespoon sugar
- 1 Tablespoon baking powder
- 3 Eggs
- 2 Cups milk or buttermilk
- 4 Tablespoons unsalted butter, melted and cooled slightly
- Pinch of salt
- 1 banana, mushed up
- 1/2 Cup walnuts, crushed
- 2 Tablespoons poppy seeds

2. In a separate bowl, combine flour, soda, baking powder, and salt. Add to creamed mixture and mix well.
3. Divide batter in half. Add the cocoa to one portion of the batter. Spread that portion in the bottom of a greased 9 x 13-inch baking dish. Spoon remaining batter on top, swirling gently with butter knife if desired, and sprinkle with chocolate chips.
4. Bake at 350 degrees for 30 minutes or until batter tests done with a toothpick or fork. Cool and cut into 24 squares.
