Testing the Untested....


Here is actually an old Halloween Cake recipe I've seen on tv years back but really haven't tried. I usually bake using the Moist Chocolate Cake recipe, which I love, but I got to try the untested. So I did but made them into cupcakes since my last posts had been on that topic;-).  And this cake actually is real good. I mean real good! I filled-up (in full) 2 cupcake molds (of  24 small ones). And it was actually gone in a matter of less than two hours. Now I miss it. Will be cooking it again soon but this time with some buttercreams. Let's call this recipe, Thick, Rich Chocolate Cupcakes.


Thick, Rich Chocolate Cupcakes
(Adapted from Halloween Chocolate Cake)
For the Cake:
1 cup butter ( I used 1/2 cup)
2 1/2 cups white sugar ( I used 3/4 cup)
4 eggs
3/4 cups cocoa prime powder
1 cup water ( I added another 1/2 'cause the batter was too thick)
1 cup milk
3 cups all-purpose flour
6 tsp baking powder
2 tsp baking soda
1 tsp vanilla
Method:
1. Preheat oven 350F 30-40 minutes before baking.
2. Ready a 10-diameter pan, bottom and sides with glad paper. ( I used 2 cupcake molds of 12.)
3. Mix wet ingredients. And in a separate bowl mix dry ingredients except cocoa powder.
4. Cream butter and sugar at medium speed. Add eggs one at a time at high speed.
5. Mix in cocoa mixture at low speed.
6. Mix in the rest of dry ingredients.
7. Fold well first before putting on pan , 3/4 full.
8. Bake for 60 minutes. ( For cupcakes, it took about 25 minutes to bake.)
9. For this recipe, instead of buttercream, simply top with butter and let it melt. Yummy!
Note: Place the mold only on the middle part of the oven, the lowest part make them bubble and not form well.
Buttercream Icing:
2 lb. confectioner's sugar
2 cups shortening
1/3 cup water
1/2 tsp salt
pinch vanilla powder
Method for icing:
1. Place sugar on mixer.
2. Add 1/2 cup shortening, water, salt and vanilla.
3. Beat at low speed fro 5 minutes.
4. Medium speed for 10 minutes.
5. Add food coloring.
Note; Piping #12 for leaves, # 18 for hair, # 4 for borders and outlines, # 5 for eyes and face, # 16 for star/brick.)


The result....GONE TOO SOON. hehehehehe....Really, really that good! Gorgeously melting in your mouth...
